Ingredients
- 1 cup pitted dates
- 1 cup mixed nuts (such as almonds, walnuts, or cashews)
- 2 tablespoons nut butter (peanut, almond, etc.)
- 1 tablespoon chia seeds or flax seeds (optional)
- 1 teaspoon vanilla extract (optional)
- A pinch of sea salt (optional)
- 1-2 tablespoons honey or maple syrup (optional, for extra sweetness)

Directions
- In a food processor, combine the mixed nuts and pitted dates.
- Blend until the mixture has a sticky, gritty consistency.
- Then blend once more until all ingredients are well combined, adding the nut butter, chia or flax seeds, vanilla essence, and a pinch of sea salt (if using).
- Add honey or maple syrup for more sweetness, then blend again.
- Scoop out tablespoon-sized parts of the mixture and use your hands to roll them into balls until it is sticky and firm.
- To firm up, place the completed balls on a pan lined with parchment and place them in the refrigerator for around half an hour.
