Fattoush Recipe

Ingredients
- 2-3 medium tomatoes, chopped
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1-2 radishes, thinly sliced (optional)
- 2-3 pita bread pieces, toasted or fried and broken into pieces
- 1/4 cup fresh parsley, chopped
- 2 tbsp fresh mint, chopped
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 1-2 tsp sumac (optional, but recommended)
- Salt and pepper, to taste

Directions
- Break the pita bread into bite-sized pieces after toasting or frying it until it is crispy.
- If used, chop the radishes, cucumber, and tomatoes. Slice the red onion thinly.
- Add the chopped onion, radishes, cucumber, and tomatoes to a large bowl.
- In the bowl with the veggies, add the chopped mint and parsley.
- Mix the sumac, lemon juice, olive oil, salt, and pepper in a small bowl.
- Gently toss the veggies to incorporate the dressing.
- Toss the salad again with the toasted pita pieces right before serving.
