Seviyan Kher
Seviyan Kheer is a delicious dessert enjoyed during Eid. It’s a sweet and creamy dish that brings families together, making the occasion even more special.

Vermicelli (seviyan), milk, sugar, and dry fruits are the ingredients of Seviyan Kheer, a delicious dessert. The seviyan is prepared by roasting it in ghee and then cooking it in milk until it becomes tender. Cardamom and saffron are optional for added taste, and sugar is added for sweetness. For texture, fried dry fruits such as cashews, raisins, and almonds are used. It is a common treat on special occasions like Eid and can be served warm or cold.
Ingredients
- 1 cup seviyan (vermicelli)
- 4 cups milk
- 1/2 cup sugar (adjust to taste)
- 1/4 cup ghee (clarified butter)
- 1/4 cup chopped almonds, cashews, and raisins
- 2-3 cardamom pods (optional)
- A pinch of saffron (optional)
Directions
- To prepare Seviyan Kheer, begin by heating 2 tablespoons of ghee in a pan and roasting the seviyan over medium heat until golden brown, stirring constantly.
- In a separate pot, bring the milk to a boil, stirring occasionally to prevent it from sticking. Once the milk boils, add the roasted seviyan and let it simmer on low heat for 10-15 minutes until the seviyan become soft.
- Stir in the sugar and allow it to dissolve completely. For added flavor, you can mix in crushed cardamom and soaked saffron.
- In another small pan, heat the remaining ghee and fry chopped almonds, cashews, and raisins until golden, then add them to the kheer.
- Let the kheer cool slightly before serving, and enjoy it either warm or chilled.
