Bolani Recipe

Bolani is a traditional Afghan stuffed flatbread that is crispy on the outside and filled with a savory spiced filling. It is often served during Eid, special occasions, or as a snack with chutney or yogurt.

Ingredients

  • 2 cups all-purpose flour
  • ½ tsp salt
  • ¾ cup water (adjust as needed)
  • 1 tbsp olive oil or vegetable oil
  • 2 medium potatoes (boiled & mashed)
  • ½ cup chopped green onions
  • ½ cup fresh cilantro (chopped)
  • 1 tsp ground cumin
  • ½ tsp black pepper
  • ½ tsp red chili flakes (adjust to taste)
  • ¼ cup vegetable oil (for frying)

Directions

Step 1

  1. In a mixing bowl, combine flour and salt.

  2. Gradually add water while kneading to form a soft dough.

  3. Add oil and knead for another 2-3 minutes until smooth.

  4. Cover and let it rest for 20 minutes.

Step 2

  1. In a bowl, mash the boiled potatoes.

  2. Add green onions, cilantro, cumin, black pepper, red chili flakes, and salt.

  3. Mix well to form a uniform filling.

Step 3

  1. Divide the dough into small balls (about the size of a golf ball).

  2. Roll each ball into a thin circle (about 8 inches in diameter).

  3. Spread 2-3 tablespoons of filling on one half, leaving the edges clear.

  4. Fold the dough over the filling to create a half-moon shape.

  5. Press the edges down to seal (you can use a fork to crimp the edges).

Step 4

  1. Heat 1-2 tbsp oil in a pan over medium heat.

  2. Place the Bolani in the pan and cook for 2-3 minutes on each side until golden brown and crispy.

  3. Repeat for all Bolani, adding more oil as needed.
