Bolani Recipe
Bolani is a traditional Afghan stuffed flatbread that is crispy on the outside and filled with a savory spiced filling. It is often served during Eid, special occasions, or as a snack with chutney or yogurt.

Ingredients
- 2 cups all-purpose flour
- ½ tsp salt
- ¾ cup water (adjust as needed)
- 1 tbsp olive oil or vegetable oil
- 2 medium potatoes (boiled & mashed)
- ½ cup chopped green onions
- ½ cup fresh cilantro (chopped)
- 1 tsp ground cumin
- ½ tsp black pepper
- ½ tsp red chili flakes (adjust to taste)
- ¼ cup vegetable oil (for frying)
Directions
Step 1

In a mixing bowl, combine flour and salt.

Gradually add water while kneading to form a soft dough.

Add oil and knead for another 2-3 minutes until smooth.

Cover and let it rest for 20 minutes.
Step 2

In a bowl, mash the boiled potatoes.

Add green onions, cilantro, cumin, black pepper, red chili flakes, and salt.

Mix well to form a uniform filling.
Step 3

Divide the dough into small balls (about the size of a golf ball).

Roll each ball into a thin circle (about 8 inches in diameter).

Spread 2-3 tablespoons of filling on one half, leaving the edges clear.

Fold the dough over the filling to create a half-moon shape.

Press the edges down to seal (you can use a fork to crimp the edges).
Step 4

Heat 1-2 tbsp oil in a pan over medium heat.

Place the Bolani in the pan and cook for 2-3 minutes on each side until golden brown and crispy.

Repeat for all Bolani, adding more oil as needed.
