This recipe only requires a few basic ingredients and takes approximately 40 minutes to create through. 

Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed (or 1 ½ cups cooked chickpeas)
  • 4 cups fresh spinach, washed and chopped
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 1 teaspoon paprika
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: lemon juice or fresh herbs (like cilantro) for garnish

Directions

  • To make the Chickpea and Spinach Stew, heat olive oil in a large pot over medium heat.
  • Add the chopped onion and garlic, cooking them for about 5 minutes until they soften and become fragrant.
  • Next, stir in the cumin, turmeric, and paprika, cooking for another minute or two to bring out their flavors.
  • Pour in the diced tomatoes, vegetable broth, and chickpeas, then boil the mixture gently. 
  • Let it cook for 15-20 minutes so all the flavors can come together.
  • Once the stew has thickened slightly, add in the spinach and cook for an additional 5 minutes until it wilts down.
  • Season with salt and pepper to taste, and serve hot with a squeeze of lemon or some fresh herbs if you'd like.
