Ingredients

  • 1 cup cooked lentils (green or brown)
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1/2 cup grated carrot
  • 1/4 cup breadcrumbs (or gluten-free breadcrumbs)
  • 2 tablespoons tahini or olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional, for garnish)
  • Lemon wedges (optional, for serving)

Directions

  • To make the Vegan Lentil Kebabs, preheat your oven to 375°F (190°C) or heat up your grill.
  • In a bowl, mix together the cooked lentils, chopped onion, garlic, grated carrot, breadcrumbs, tahini (or olive oil), and spices. 
  • Stir everything until it sticks together , if it feels too dry, add a little more tahini or water.
  • Shape the mixture into small patties or mold it onto skewers.
  • Bake for 25-30 minutes, flipping halfway, or grill for about 10-12 minutes, turning occasionally until they’re golden and crispy.
  • Serve with a sprinkle of fresh parsley and a squeeze of lemon.
