Sheer Khurma Recipe
Sheer Khurma, meaning “milk with dates,” is a rich and creamy vermicelli pudding traditionally prepared during Eid in South Asian households. It is flavored with saffron, cardamom, and nuts, making it a delicious festive dessert.

Ingredients
- 1 liter full-fat milk
- ½ cup vermicelli (broken into small pieces)
- ¼ cup ghee (clarified butter)
- ¼ cup sugar (adjust to taste)
- 8-10 dates (chopped)
- ¼ cup almonds (sliced)
- ¼ cup pistachios (sliced)
- ¼ cup cashews (chopped)
- 2 tbsp raisins
- ½ tsp cardamom powder
- 5-6 strands saffron (optional)
- 2 tbsp condensed milk (for extra richness, optional)
Directions
Step 1: Roast the Vermicelli

Heat ghee in a pan on medium heat.

Add vermicelli and roast until it turns golden brown, stirring continuously.

Remove from heat and set aside.
Step 2: Cook the Nuts & Dates

In the same pan, add a little more ghee and sauté chopped dates, almonds, pistachios, cashews, and raisins until slightly golden.

Set aside for garnishing later.
Step 3: Simmer the Milk

In a deep saucepan, bring milk to a boil over medium heat.

Add cardamom powder, saffron strands, and sugar, stirring well.

Let it simmer for 10-15 minutes, stirring occasionally until it thickens slightly.
Step 4: Add Vermicelli & Nuts

Add the roasted vermicelli to the milk and cook until soft (about 7-10 minutes).

Stir in the sauteed nuts and dates, mixing everything well.

For extra creaminess, add condensed milk and cook for another 5 minutes.
Step 5: Final Touches & Serve

Add rose water (optional) and give it a final stir.

Garnish with more nuts and saffron strands.

Serve warm or chilled in bowls.
