Shish Kebab is a popular Middle Eastern dish made from marinated cubes of meat, usually lamb, chicken, or beef, skewered and grilled over an open flame. It is often served with vegetables, rice, or flatbread, and flavored with spices like cumin, paprika, and garlic.

Ingredients

  • For the Marinade:
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 2-3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp ground coriander
  • 1/2 tsp ground black pepper
  • 1 tsp salt
  • 1 tbsp chopped fresh parsley (optional)
  • 1/2 tsp ground turmeric (optional)
  • 1-2 tbsp yogurt (optional for tenderness)
  • For the Kebab:
  • 1 1/2 pounds meat (lamb, chicken, or beef), cut into cubes
  • 1-2 bell peppers, cut into chunks (optional)
  • 1 onion, cut into chunks (optional)
  • 1-2 tomatoes, cut into chunks (optional)
  • Wooden or metal skewers for grilling

Directions

  • To make Shish Kebab, start by preparing the marinade by mixing olive oil, lemon juice, minced garlic, cumin, paprika, coriander, black pepper, salt, and optional parsley, turmeric, and yogurt in a bowl.
  • Add the cubed meat to the marinade, tossing to coat evenly, and let it marinate for at least 30 minutes (or up to overnight in the fridge for more flavor).
  • Preheat your grill to medium-high heat, then thread the marinated meat onto skewers, alternating with chunks of bell peppers, onions, and tomatoes if desired.
  • Grill the skewers for 10-15 minutes, turning occasionally, until the meat is cooked to your preferred level of doneness.
  • Serve the kebabs hot with your choice of sides, such as rice or flatbread.
